For quite a while now I’ve been making at least two meals every night, one for our little lad, and another one for OH and I, and on occasions a separate one for OH as he’s trying to lose a pound or two.Well today I’d had enough. I want to be able to cook a nutritious meal that we can all eat. I had a look at various recipes trying to see if I could find one that I could adapt to fulfil all of our needs.I did come across one that I thought I would try, and it’s actually an Annabel Karmelrecipe, although she called hers chicken curry:
Serves 4 (2 Adults & 2 Children)
Ingredients
2 tbsp vegetable oil
1 onion peeled and chopped
1 clove garlic, crushed
1 small carrot cut into matchsticks
1 medium apple, peeled and thinly sliced
2 chicken breasts cut into bite sized chunks
1 tbsp Korma curry paste (on offer in Co-op at the moment, 2 for 1)
1/2 tbsp mango chutney (again on offer at the Co-op, 2 for 1)
1 tbsp tomato puree
100g frozen peas
150 ml coconut milk
1 chicken stock cube dissolved in 150 ml boiling water
salt and freshly ground black pepper

Half a bag of dried mixed beans (approx 250g)
Two cans of chopped tomatoes
One onion
Two carrots (bendy ones welcome)
Three handfuls of frozen sliced beans (brrrrr)
One teaspoon of dried thyme
Potatoes or pasta as a side dish

Brisket is a cut taken from the breast of the cow, where there is a bit more connective tissue (cartilage) running through it.
Because of this, the meat is cheaper than parts with fewer chewy bits, and takes a slightly different cooking method to get the most out of.
Without any further ado, please find below mammasaver's own Beef Brisket Recipe. All in, this meal cost us under £4, and serves 4 adults:
Ingredients:
One joint of Brisket (ask your butcher/supermarket butcher for a cut)
One bag of Iceland casserole vegetables (£1 - a frugal kitchen staple)
One bag of Tesco Value new potatoes (65p)
One teaspoon of dried thyme
One teaspoon of dried parsley
3 crushed garlic cloves
